Butternut squash pasta
Ingredients:
-1 lg butternut squash
- raw sharp cheddar
- gluten free noodles
Directions:
- poke holes in butternut squash, microwave for 8 mins
- cut in half, put on baking sheet, roast at 375 for 20 mins
- let butternut squash cool, add to blender.
- blend butternut squash until smooth
- boil gluten free noodles
- add butternut squash puree to gluten free noodles, top with raw cheddar cheese!
This is a nice spin on mac and cheese! Healthy and tasty!

Pizza rolls
These are fairly low calorie, big on taste!
Ingredients:
- egg roll wrappers
- turkey pepperoni
- pizza sauce
- light mozzarella cheese stick
Directions:
- take an egg roll wrapper, put 1/2 tbsp pizza sauce onto surface
- add 4 turkey peperoni and 1/2 string cheese
- roll up from corner to corner, tucking sides in (like a present)
- bake at 425 for 10 mins

Roasted Cherry tomatoes
Ingredients:
* 4 small containers of cherry tomatoes
* 5-8 basil leaves
* 2-3 tbsp olive oil
* salt and pepper to taste
-Pour tomatoes onto baking pan
- tear basil leaves onto tomatoes
- pour olive oil over tomatoes
- add salt and pepper
- mix together, I use my hands
- Bake at 375 for 10- 15 mins
Sometimes I add parm to this after its done baking!

Tomato, motz, arugula pasta salad
Ingredients:
* 2 boxes of penne
* arugula
* marinated mozzarella balls
* cherry tomatoes
Mix all ingredients to your liking! I used 3 containers of marinated mozzarella balls, 2 boxes of penne, 2 containers of cherry tomatoes and about 2 cups arugula. The marinade from the mozzarella balls makes an excelent sauce!

Sloppy joe casserole
Ingredients:
* 2lbs ground beef or turkey
* 1lg bag of tater tots or potato rounds
* 1 lg can of tomato paste
* yellow mustard
-Brown ground beef in a skillet, season according to your liking
- add can of tomato paste
- add 1/4 c of yellow mustard
- mix, turn off heat
- add sloppy joe mixture to casserole pan
- top sloppy joe mix with bag of tater tots
- bake at 375 for 20 mins!
My family really enjoyed this one!

Chicken bacon ranch spaghetti squash pasta
Ingredients:
* 3 spaghetti squash
* 1 bottle Hidden Valley Ranch
* 1 pkg of chicken breast
* large bag of shredded cheese
* kraft parm cheese
* 1 pkg bacon
** set oven to 375, bake your chicken and bacon until done, make sure bacon is really crispy!
** While the chicken is cooking you need to cook your squash. All you do is take the squash one at a time, put into microwave for 11 mins. When each one comes out put it on cutting board and cut in half. Let cool.
** after squash is cooled scrape out seeds, then take a fork and scrape inside of squash. This should produce long strands of squash that look like spaghetti, do this to all 3 squash. Add spaghetti squash to baking dish.
** when chicken is done, let cool then tear into small pieces or cut into small cubes, add to baking dish with squash.
** crumble all bacon into baking dish with chicken and squash.
** Add your ranch, I used the whole bottle
** add as much cheese as you like (I use alot) and mix all ingredients together in the baking dish.
** finally add more cheese to the top and bake for 20 mins at 375.
This was really good! I found this chicken, bacon ranch pasta dish I wanted to try but don't like eating pasta all the time. I decided to try and substitue spaghetti squash, it was just as good as any pasta! This is a good way to sneak veggies into your kids diet!

Crockpot deer burger, broccoli, pasta alfredo
Ingredients-
*1 1lb pkg deer burger
* 1 small bag of frozen broccoli
* 4 jars of your favorite alfredo
sauce
* 2 small boxes of favorite pasta (I used gluten free)
This recipe is really easy, I use recipes like this on nights when i'm working late or have sports. The only prep is to brown the deer burger, once browned add to crockpot. Mix all the rest of the ingredients in, set on high for 3 hours. If you are going to need to to cook longer just set it on low!

Zoodle romen
I have been sick and craving top romen, so I created one with "zoodles"! I could not believe how much it tasted like the real deal!
Recipe:
- 1 tsp red pepper flakes
- 3 zucchini
- 2 cup chicken stock
- 1 bay leaf
- 1 tbsp garlic powder
- 2 tsp salt
- 1 chicken bouillon cube
- 2 tbsp olive oil
Romen base-
- 2 cup chicken stock
- 1 cube chicken bouillon
- 1 bay leaf
-bring to a boil
Zoodle's-
- spiral 3 zucchini onto paper towels
- sprinkle with salt, top withpaper towels, let sit for 1-2 hours
- pat with papertowel
- add 1 tbsp olive oil to heated pan
- put zoodles in a bowl, add 1 tsp of oil (this will keep zoodles from absorbing moisture)
- add to hot pan (med heat) add garlic powder red pepper flakes and a pinch of salt
- just heat through, until noodles are warmed through
- add to bowl, top with romen base

Chicken Fried Steak with hollandaise
This was so yummy!! I am now doing low carb, so came up with this recipe!
Recipe:
- tenderized beef cutlets
- 6 eggs
- 1 1/2 c coconut flour
- frozen green beans
- 1/2 onion
- 3 cloves garlic
- 1 c olive oil
- jonnys seasoning salt
- 1 stick of butter
Hollandaise- 4 room temperature egg yolks. Put into blender mix a little, add 1 stick of melted butter and 2 tbsp lemon juice, mix until thick!
Chicken fried steak- coat steak in 2 remaining eggs, then add to coconut flour seasoned with jonnys seasoning. Put into hot pan with olive oil, fry until golden brown. As you are frying, you might have to add more oil for other steaks.
Green beans- chop 1/2 an onion, and 3 cloves of garlic. I use the same pan that i fried steaks in. Let simmer for a minute, add frozen green beans.
Add green beans to your plate, put chicken fried steak on and top it all off with creamy hollandaise sauce! Yum!

Roasted asparagus with bacon, fried egg and hollandaise sauce
This was so good! Something decadent yett affordable to make!
Recipe:
-5 eggs, 4 at room temperature
- 1 bundle of small asparagus
- 1 stick of butter
- 5 tbsp olive oil
- salt and pepper to taste
- 1/2 pack of bacon
* preheat oven to 400
* lay asparagus on cooking sheet, drizzle with olive oil, salt and pepper to your liking. Bake.
* line a second baking sheet with bacon, when asparagus is halfway done cooking add bacon to oven. Cook the bacon until it is crispy
* hollandase sauce: add all ingredients into blender
* add 4 room temperature eggs, very important it is room temp.
* add in 1 stick of melted butter
* salt and pepper
* blend until thick
* fry up an egg
* assemble: asparagus, bacon, egg, and hollandaise

Julia Child's white bread
This will make you never want to buy bread again!
Recipe:
- 2 1/2 c of warm water
- 1 tbsp. active dry yeast
- 1 tbsp. sugar
- 6 1/2 c of all purpose flour
- 2 tsp. salt
- 1/4 c of butter softned
* pour 1/2 c of warm water, yeast and sugar into a bowl
* let yeast sit and bubble for 10 minutes
* mix the rest of ingredients in a large bowl, add yeast mixture.
* I used my hands to mix alltogether
* put bread dough into a bowl, let rise for 1 1/2 hours
* bake at 375, in a loaf pan, I seperated this and made 2 loafs!

Zucchini gratin
This is an awesome side dish!!
Recipe:
- 5 small zucchini sliced into rounds
- 1 1/2 c heavy cream
- 1 1/2 c shredded parm cheese
- 6 tbsp butter
- 1 tbsp chopped garlic
- salt and pepper
* Grease a casserole pan, lay chopped zucchini in.
* salt and pepper the zucchini
* sprinkle garlic over the top
* pour heavy cream into pan
* add cheese to the top
* spread 6 tbsp of butter over parm cheese.

Poor man deer burgers
Poor man deer burgers is a family recipe, my mom always made our burgers this way. My grandma had 6 kids, so she used to use this recipe to make the burger filling and to make it stretch.
Recipe:
- half of a large onion chopped
- 1 pkg ground beef, or any preferred ground meat
- 1 tbsp garlic
- 1 egg, 2 if you used a large pkg. of ground meat
- 2 slices of bread torn into pieces
- a few dashes of worchesturshire sauce
- jonnys seasoning
- mix the ground meat, onion, egg, garlic, bread and worchesturshire sauce together
- make into whatever size patties you like
- sprinkle patties with jonnys seasoning
- bake at 375 for 20-30 mins
Hush puppies
My husband is from Georgia, so I get asked to make these quite a bit. I put my own spin on the origional recipe.
Recipe:
- 6 cups peanut oil
- 1 1/2 c self rising cornmeal
- 1/2 c flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 small onion chopped
- 1 c buttermilk
- 1 egg lightly beaten
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 cup jalepeno peppers
* heat peanut oil in large pot or you can use a deep fryer
* mix the rest of the ingredients into a bowl.
* once oil is hot, drop spoonfulls of muxture into oil
Tunisian salad
Tunisian salad, very healthy and filling. One of my favorites during the summer months when I'm worried about my figure!
Recipe:
- arugula
- 1 packet of tuna fish
- sliced cucumber
- green olives
- tomato
- peppers
- assemble all ingredients to your liking, add a drizzle of olive oil if its too dry
Farm stand salad
This salad recipe I got off of food network! Its one of my all time favorites, even my husband likes it!!
Recipe:
- arugula
- sliced pears
- shaved parm
- 1 tbsp olive oil or enough to barely coat arugula
- salt and pepper to taste
Steak with peach, blue cheese arugula salad
During the summer months all of the fruits and veggies are fabulous! To take advantage, try this salad. Pair it with a nice steak and glass of wine!
Recipe:
- arugula
- olive oil (1tbsp)
- blue cheese
- peach
- favorite steak
Salad:
- mix arugula, blue cheese, sliced peach and olive oil together
- serve with your favorite steak
Bread pizza
If you have kids in the house you can't go wrong with bread pizza!
Recipe:
- loaf of favorite bread
- marinara
- favorite pizza toppings and cheese
- cut loaf of bread in half
- top with marinara and all your favorite pizza toppings
- bake at 375 until cheese is melted
